Orange amaranth is an easy to grow fall or summer annual; depending upon your growing zone. This amaranth grows 3-5 feet tall. The burnt orange blooms can be harvested at any stage. The plants will produce side shoots and the smaller blooms are excellent used in cut flower arrangements. They sometimes require staking, but usually not.
Harvested at 20 to 30 days, it's young leaves are tender and mild and make a nice addition to a mixed greens salad. More mature leaves are used as a tasty cooked green and taste similar to spinach. It's seeds, as a "pseudo-grain," contain many amino acids and nutrients and can be eaten raw, sprouted, toasted or ground into flour.
